All That and a Bag of Chips

Lex and I have been musing over a potential Chip and Dip Party for a long time. We have selected March Madness season as our prospective date and I am writing this entry to remind us that we need to get moving on our plans, as February is a short month.
So, in preparing the menu, I look to the webernet for some advice on the best chips and dips ever.
But first, the plan:
Location: Red Hook (You think we would have it at my place? Nonsense. His is bigger and I am still scraping cheesecake off my ceiling)
Time: Sometime in the afternoon because I get drunk easily and tired even faster and we don't want your drunk ass sleeping on the couch for the night. That's my ass's job.
Theme: Chip and Dip
Things to Bring: Chips and Dip and Beer.
In short, we want to have a party where the only foods served are different varieties of chips and dip. We are thinking creative dips, not your run of the mill freeze-dried onion sour cream dip from a pouch (though it would probably be a sin not to have a little bit of that).
If you think about it, there are a million kinds of dip that could be created—onion, artichoke, bean, guacamole, salsa, etc.— and equally as many different kinds of chips—potato, corn, blue corn…pine-NUT, hazelNUT, peaNUT, and my momma always used to say Harlan, stop namin’ nuts. Just had to slip in a little Best in Show somewhere. Sorry.
What are your suggestions? Recipes? If you submit one good enough, we might even invite you. But then you would have to come all the way out to Red Hook. Can you handle it?

Actually the couch is for Olga's ass.
But I am not so sure I want to see her drunk. Tipsy, maybe. A drunk Olga is a frightening proposition.

damn! i want to go! this is a great party idea. i used to make this dip where all you do is spread a chunk of cream cheese on a serving platter.. then spread some chili (or was it cocktail?) sauce on it - not quite to the edges.. then sprinkle some of that baby shrimp in a can on there. it sounds weird but i could eat the ENTIRE thing with crackers. and you can make it lowfat with lowfat cr cheese if you want!
also, does baked brie count as a dip? because that is like HEAVEN

one more.. this is super simple.. i had it at a bbq over the summer and fell in love .. the next day i went and got the ingredients to make it myself.
go to harry and david and get some of this onion/pepper relish and mix it up with cream cheese til it's a good dip consistency. it's sweet and spicy and delicious. you can use chips or crackers to eat it.

If nothing else, you can't go wrong with guacamole: avocado, vidalia onion, jalapeno pepper, cilantro, lime, & salt. I could eat this all day.

damn, rachelle stole my recommendation - it actually works with any salsa and cream cheese and is delish.
so my contribution is mango salsa - yummy.
oooh, if you have it towards the end of march instead of the beginning, i'll be in town on spring break.....

I found this site by searching for an article by Sarah Hepola but I am totally into this chip dip stuff. I am guessing a trip from Dallas would be both weird and too far, so I submit my two cents.
Baba Ghannouj & warm Pita wedges & a good wheat beer
1 eggplant
2 cloves garlic
2 ounces fresh lemon juice
2 tablespoons tahini
1/2 bunch parsley, leaves only
Salt and pepper
Pierce some holes in the skin of the eggplant (to avoid explosion) and grill over medium-high heat turning every 7 minutes, until the skin is blackened and the body is nice and soft. Total time for grilling is about 30 minutes. If you do not have a grill you can roast your eggplant in a 375 degree F oven for about 30 minutes.
Remove eggplant from the grill and let cool.
Once the eggplant is cool enough to handle, peel away the skin and discard. Place the eggplant flesh in a colander and drain for 10 minutes. In a food processor, combine garlic, lemon juice, tahini and parsley and pulse to combine. Add the eggplant flesh. Season with salt and pepper and pulse to combine. Adjust the flavor with more Tahini or lemon juice if you prefer. If it's bitter, some sugar or honey will help. Research shows that the white variety of plant is sweeter in flavor.

This is a recipe that I found in the NYTimes that I was going to make for Superbowl Sunday but it didn't work out because my crappy supermarket didnt have all the ingredients. Anyway, here is the recipe:
Mango-Jicama Guac
2 large avocados
1/2 C. spanish onions, diced
I C. tomatoes, diced
1 TBLS serrano chilies, minced
1 TBLS cilantro, roughly chopped
1 tsp. salt
1 TBLS lime juice
2 TBLS adobo sauce from canned chipotles, save peppers for some other time, some other recipe
1/2 C. jicama, diced
1/2 C. mango, diced
Slice avocados in half, remove pits, scoop flesh into bowl. Mash, add the rest of the ingredients and stir to combine.
Serve with tortilla chips...natch.
Let me know how it comes out, if anyone makes it!

Pretty much any weekend in March qualifies for March madness, but i havent checked the tournament schedule yet. I guess we should pick a weekend soon...
Re: public transport in the hook. There is a bus. The B61 drops you off right in front of my house. A horse and buggy may be faster though.
